Vegetarian Spicy Chili

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 1 chopped onion
  • 4 garlic cloves, chopped
  • 1/4 cup chili powder
  • 1 tablespoon curry powder
  • 1 teaspoon cayenne pepper
  • 2 chopped carrots
  • 4 cups vegetable broth
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can corn
  • 1 (15 ounce) can black beans
  • 1 (15 ounce) can red beans

Recipe

  • 1 1. cook onions, garlic, chili powders, curry powder, and cayenne pepper in olive oil for about 5 minutes or until onions are soft.
  • 2 2. add carrots and 1 can of vegetable broth. bring to boil and reduce heat. let simmer for about 10 minutes to soften carrots.
  • 3 3. add can of diced tomatoes, corn, black beans, red beans, and remaining vegetable broth. bring to boil and reduce heat. cover and let simmer for 30 minutes.
