Vegetarian Spicy Chili

Ingredients
- Servings: 6
- 2 tablespoons olive oil
- 1 chopped onion
- 4 garlic cloves, chopped
- 1/4 cup chili powder
- 1 tablespoon curry powder
- 1 teaspoon cayenne pepper
- 2 chopped carrots
- 4 cups vegetable broth
- 1 (15 ounce) can diced tomatoes
- 1 (15 ounce) can corn
- 1 (15 ounce) can black beans
- 1 (15 ounce) can red beans
Recipe
- 1 1. cook onions, garlic, chili powders, curry powder, and cayenne pepper in olive oil for about 5 minutes or until onions are soft.
- 2 2. add carrots and 1 can of vegetable broth. bring to boil and reduce heat. let simmer for about 10 minutes to soften carrots.
- 3 3. add can of diced tomatoes, corn, black beans, red beans, and remaining vegetable broth. bring to boil and reduce heat. cover and let simmer for 30 minutes.
