Chicken Chili

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 1 lb chicken breast, skinless, boneless, cut into 1/2 inch cubes (i use 3-4 frozen breasts)
  • 1 medium yellow onion, diced
  • 2 tablespoons vegetable oil
  • 1 1/2 teaspoons garlic powder
  • 2 (15 ounce) cans great northern beans, rinsed and drained
  • 14 ounces chicken broth
  • 4 ounces diced green chilies
  • 1 teaspoon ground cumin
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1 cup whipping cream
  • 1 cup sour cream

Recipe

  • 1 in a large saucepan, saute chicken, onion, and garlic powder in oil, until chicken is no longer pink.
  • 2 add beans, broth, chilies, and spices.
  • 3 bring to a boil. reduce heat; simmer, uncovered for 30 minutes.
  • 4 remove from heat and stir in whipping cream and sour cream.
  • 5 serve immediately.
  • 6 garnish with shredded colby jack cheese, diced green onions, and/or a spoonful of sour cream.
  • 7 note: this can also be put in the crock pot. saute the chicken and onions and then add them to the crock pot with the other ingredients (except for the creams). cook on low. a few minutes before serving, stir in the whipping cream and sour cream.
