Portuguese Cavacas

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 9 large eggs, room temperature
  • 1/2 cup milk
  • 7 ounces vegetable oil
  • 2 cups all-purpose flour
  • vegetable oil, for baking dishes
  • 10 tablespoons icing sugar, sifted
  • 3 tablespoons hot water

Recipe

  • 1 preheat oven to 350f and grease 24 muffin tins.
  • 2 beat the eggs thoroughly, then mix in the milk and oil. once mixed, add the flour and blend until well combined.
  • 3 place 1 teaspoon of oil in each tin, then pour 1 tablespoon of the batter in each tin.
  • 4 bake for 35 - 40 minutes. let cool slightly, then brush the cavacas with the icing. let the icing harden before serving.
  • 5 icing: mix the 10 tablespoons of icing sugar and the water to a thick consistency. add more sugar or water as needed.
