Bean, Garlic, And Rosemary Dip

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 3 cups canned cannellini beans, drained and rinsed
  • 3 garlic cloves, chopped
  • 2 tablespoons chopped fresh rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice (or wine vinegar)
  • 1 pinch cayenne
  • 1 bunch spinach (may substitute greens of your choice)

Recipe

  • 1 in a food processor, process garlic till minced.
  • 2 add remaining ingredients to food processor and process until smooth.
  • 3 season to taste.
  • 4 optional: may steam spinach, squeeze out liquid, chop, and add to dip.
