Beans & Spinach On The Side

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 2 tablespoons olive oil
  • 1/4 lb pancetta, chopped (use bacon in a pinch)
  • 4 garlic cloves, minced
  • 2 shallots, diced
  • 1 (15 ounce) can beans, drained and rinsed
  • 3 cups fresh spinach
  • 1/2 cup chicken stock
  • salt & pepper

Recipe

  • 1 saute pancetta about 3 minutes.
  • 2 add garlic and shallots; saute another 3 minutes until the garlic begins to brown.
  • 3 add beans cook another 3 minutes, stirring now and then.
  • 4 add spinach and stock; cover and cook a few more minutes, until spinach wilts.
  • 5 season with salt and pepper.
