Cabbage, Radish, Mint And Caraway Salad (slaw)

Ingredients

  • Servings: 6
  • 1/2 cabbage, very finely sliced
  • 6 sprigs mint, leaves torn
  • 6 red radishes, very finely sliced
  • 1/2 red onion, finely chopped
  • 1 1/2 teaspoons caraway seeds, ground
  • 1/2 lemon, juiced
  • 100 ml extra virgin olive oil
  • sea salt, ground
  • black pepper, freshly ground

Recipe

  • 1 finely slice the cabbage and radish. place in a large bowl.
  • 2 add the torn mint leaves and finely chopped red onion. set aside.
  • 3 in a small bowl, add all of the dressing ingredients. whisk until smooth.
  • 4 pour the dressing over the salad/ cabbage mixture and gently toss to combine.
  • 5 set the salad aside for at least 5 minutes before serving.
