Ingredients

- 1/2 cup dried beans (pinto, navy, black, etc.)
- 1 onion
- 1 green bell peppers or 1 red bell pepper
- 3 tablespoons oil
- 2 tablespoons flour
- 2 cups salsa
- 1/2 cup rice, uncooked
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 soak beans overnight.
- 2 cook beans until tender, drain.
- 3 make roux.
- 4 using 2 tbsp.
- 5 oil, brown the flour until dark brown.
- 6 dice onion and bell pepper.
- 7 saute onion and pepper until onion is golden.
- 8 add all ingredients to casserole dish.
- 9 bake 45 min.
