Vegetarian Texas Hash

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1/2 cup dried beans (pinto, navy, black, etc.)
  • 1 onion
  • 1 green bell peppers or 1 red bell pepper
  • 3 tablespoons oil
  • 2 tablespoons flour
  • 2 cups salsa
  • 1/2 cup rice, uncooked
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 soak beans overnight.
  • 2 cook beans until tender, drain.
  • 3 make roux.
  • 4 using 2 tbsp.
  • 5 oil, brown the flour until dark brown.
  • 6 dice onion and bell pepper.
  • 7 saute onion and pepper until onion is golden.
  • 8 add all ingredients to casserole dish.
  • 9 bake 45 min.
