Tangy Cauliflower With Peanut Sauce

Ingredients

- 3 cups cauliflower florets
- 1 teaspoon lime juice, fresh
- 1/2 teaspoon lime peel, fresh, minced
- 2 garlic cloves, minces
- 1/4 teaspoon curry powder
- 1/8 teaspoon red pepper
- 1 tablespoon peanut butter, plus
- 1 teaspoon peanut butter
- 1/3 cup apple juice, natural
Recipe
- 1 over medium-high heat, cook cauliflower in small amount of water until just fork-tender. drain & set aside.
- 2 combine rest of ingredients in small saucepan & bring to a low simmer.
- 3 continue to cook, stirring occasionally, until mixture thickens enough to adhere to back of spoon.
- 4 toss sauce and cauliflower together & serve warm or at room temperature.
