Tangy Cauliflower With Peanut Sauce

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 3 cups cauliflower florets
  • 1 teaspoon lime juice, fresh
  • 1/2 teaspoon lime peel, fresh, minced
  • 2 garlic cloves, minces
  • 1/4 teaspoon curry powder
  • 1/8 teaspoon red pepper
  • 1 tablespoon peanut butter, plus
  • 1 teaspoon peanut butter
  • 1/3 cup apple juice, natural

Recipe

  • 1 over medium-high heat, cook cauliflower in small amount of water until just fork-tender. drain & set aside.
  • 2 combine rest of ingredients in small saucepan & bring to a low simmer.
  • 3 continue to cook, stirring occasionally, until mixture thickens enough to adhere to back of spoon.
  • 4 toss sauce and cauliflower together & serve warm or at room temperature.
