Zucchini (or Yellow Squash) Cream Pie

Total Time: 1 hr 15 mins Preparation Time: 10 mins Cook Time: 1 hr 5 mins

Ingredients

  • 2 cups peeled and chopped zucchini or 2 cups yellow squash
  • 3 cups water
  • 1 cup evaporated milk
  • 2 cups sugar
  • 1 egg, beaten
  • 2 tablespoons butter or 2 tablespoons margarine
  • 3 tablespoons flour
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 9 inch pie shell

Recipe

  • 1 cook zucchini in water until tender.
  • 2 drain then put in refrigerator for 10 minutes.
  • 3 drain zucchini.
  • 4 blend zucchini, evaporated milk, sugar, egg, butter, flour, vanilla together.
  • 5 pulsing until creamy.
  • 6 pour mixture into pie crust and sprinkle with cinnamon and nutmeg.
  • 7 bake at 325 for 65 minutes or until a knife comes out clean.
