Maxine's Curry Pickle (a Sweet Pickle)

Total Time: 25 hrs Preparation Time: 1 hr Cook Time: 24 hrs

Ingredients

  • 4 quarts sliced cucumbers
  • 1 gallon water
  • 7 tablespoons salt
  • 3 pints apple cider vinegar
  • 4 cups sugar
  • 1 tablespoon celery seed
  • 2 tablespoons mustard seeds
  • 3 teaspoons curry powder

Recipe

  • 1 soak cucumber slices in salt water overnight.
  • 2 drain and rinse.
  • 3 make a syrup of last 5 ingredients and bring to a boil.
  • 4 put cucumbers into syrup and reduce heat to below boiling point.
  • 5 stir constantly for 4 minutes.
  • 6 place cucumbers in hot sterile jars.
  • 7 bring liquid back to boiling point and pour into jars.
  • 8 they will seal.
