Whole Wheat Popovers

Ingredients

- 2 eggs
- 1 cup skim milk
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 tablespoon unsalted margarine, melted
- 1/4 teaspoon salt
- vegetable oil cooking spray
Recipe
- 1 place eggs and milk in container of an electric blender; process until bubbly. add flour, margarine, and salt; process until smooth.
- 2 place a muffin pan coated with cooking spray in a 450 degree oven 3 minutes or until very hot.
- 3 spoon batter into muffin pan, filling two-thirds full.
- 4 bake at 425°f for 20 minutes; reduce heat to 350°f, and bake 10 minutes.
- 5 prick each popover with a fork to let steam.
- 6 escape, and bake an additional 5 minutes.
