Turkey Quinoa Sloppy Joes

Ingredients

- 1/2 cup quinoa, rinsed
- 1 tablespoon olive oil
- 1 small green bell pepper, chopped
- 1 1/2 cups chopped onions
- 1/2 cup chopped celery
- 2 garlic cloves, minced
- 12 ounces lean ground turkey
- 1 (15 ounce) can tomato sauce
- 1/4 cup ketchup
- 1 tablespoon worcestershire sauce
- salt and pepper
- hamburger bun
Recipe
- 1 in medium saucepan of boiling water, cook quinoa. drain.
- 2 meanwhile sauté vegetables and garlic in oil. add turkey and cook until no longer pink.
- 3 stir in quinoa, tomato sauce, ketchup and worcestershire sauce; bring to a boil. reduce heat and simmer 6-8 minutes. season to salt and pepper.
- 4 top bottom halves of buns with turkey mixture. cover with top halves.
