Turkey Quinoa Sloppy Joes

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1/2 cup quinoa, rinsed
  • 1 tablespoon olive oil
  • 1 small green bell pepper, chopped
  • 1 1/2 cups chopped onions
  • 1/2 cup chopped celery
  • 2 garlic cloves, minced
  • 12 ounces lean ground turkey
  • 1 (15 ounce) can tomato sauce
  • 1/4 cup ketchup
  • 1 tablespoon worcestershire sauce
  • salt and pepper
  • hamburger bun

Recipe

  • 1 in medium saucepan of boiling water, cook quinoa. drain.
  • 2 meanwhile sauté vegetables and garlic in oil. add turkey and cook until no longer pink.
  • 3 stir in quinoa, tomato sauce, ketchup and worcestershire sauce; bring to a boil. reduce heat and simmer 6-8 minutes. season to salt and pepper.
  • 4 top bottom halves of buns with turkey mixture. cover with top halves.
