Swordfish Fajitas - Mexico

Ingredients

- 4 wheat flour tortillas, soft
- 1 tablespoon vegetable oil
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 lb swordfish, cut into 1/2 inch cubes
- 2 tablespoons pesto sauce, prepared
- 1 tomato, diced
- 1 avocado, peeled, sliced and diced
Recipe
- 1 heat oil in heavy, large skillet over medium-high heat.
- 2 saute the fish until almost cooked through, about 5 minutes.
- 3 add onions and peppers and saute until tender.
- 4 remove from heat and stir in pesto.
- 5 spoon seafood mixture into tortillas.
- 6 top with tomato and avocado, fold tortillas over.
- 7 serve warm.
