Swordfish Fajitas - Mexico

Total Time: 28 mins Preparation Time: 20 mins Cook Time: 8 mins

Ingredients

  • Servings: 2
  • 4 wheat flour tortillas, soft
  • 1 tablespoon vegetable oil
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 lb swordfish, cut into 1/2 inch cubes
  • 2 tablespoons pesto sauce, prepared
  • 1 tomato, diced
  • 1 avocado, peeled, sliced and diced

Recipe

  • 1 heat oil in heavy, large skillet over medium-high heat.
  • 2 saute the fish until almost cooked through, about 5 minutes.
  • 3 add onions and peppers and saute until tender.
  • 4 remove from heat and stir in pesto.
  • 5 spoon seafood mixture into tortillas.
  • 6 top with tomato and avocado, fold tortillas over.
  • 7 serve warm.
