Texas Caviar

Ingredients

  • Servings: 8
  • 1 green pepper, chopped
  • 1 small red onion, chopped
  • 1 (15 ounce) can pinto beans
  • 1 (15 ounce) can black-eyed peas
  • 1 (15 ounce) can corn
  • 1/3 cup vinegar
  • 1/3 cup sugar

Recipe

  • 1 drain corn, beans and peas.
  • 2 combine the pepper, onion, and all cans into
  • 3 large bowl.
  • 4 boil the vinegar, add sugar and stir until dissolved.
  • 5 pour over vegetables, and stir. refridgerate overnight.
  • 6 serve with fritos scoops.
