Squash Hush Puppies

Ingredients

- 1 tablespoon butter
- 2 small onions, finely chopped
- 1 cup cornmeal
- 1/3 cup flour
- 1 tablespoon baking powder
- salt
- 1/2 cup milk
- 1 egg, beaten
- 3/4 cup pureed cooked squash
- fresh hot chili pepper
- 4 cups vegetable oil
Recipe
- 1 in skillet, melt butter over medium heat. add onion and cook, stirring for 5 minutes.
- 2 in a bowl, combine cornmeal, flour, baking powder and salt. form a well in center and pour in milk, egg and squash.
- 3 stir until well blended. stir in onion and add chile pepper to taste.
- 4 in deep skillet, heat oil to 350. in batches, drop 1 tablespoon batter per hush puppy into hot oil, turning once until golden.
- 5 using a slotted spoon, remove from oil and place on paper towels to drain.
