Wheat-free Banana Delight

Ingredients

  • Servings: 5
  • 3/4 cup sugar
  • 5 tablespoons vegetable oil
  • 3 large eggs
  • 2 tablespoons molasses
  • 3 large ripe bananas
  • 1/2 cup whole milk
  • 1 cup rolled oats
  • 1 cup rye flour
  • 1/3 cup teff (ethiopian grain flour)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon powdered ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cayenne
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 400°f.
  • 2 combine first four ingredients in a large bowl and thoroughly beat, until eggs start to change color.
  • 3 combine banana, oats, vanilla and milk, add to the bowl.
  • 4 mix together all the rest of the dry ingredients, mix into the wet ones, beating well.
  • 5 pour into pyrex dish or pan
  • 6 bake at 400°f for 1/2 hour or until knife come out clean.
  • 7 cool.
