Wheat-free Banana Delight

Ingredients

- 3/4 cup sugar
- 5 tablespoons vegetable oil
- 3 large eggs
- 2 tablespoons molasses
- 3 large ripe bananas
- 1/2 cup whole milk
- 1 cup rolled oats
- 1 cup rye flour
- 1/3 cup teff (ethiopian grain flour)
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon powdered ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cayenne
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
Recipe
- 1 preheat oven to 400°f.
- 2 combine first four ingredients in a large bowl and thoroughly beat, until eggs start to change color.
- 3 combine banana, oats, vanilla and milk, add to the bowl.
- 4 mix together all the rest of the dry ingredients, mix into the wet ones, beating well.
- 5 pour into pyrex dish or pan
- 6 bake at 400°f for 1/2 hour or until knife come out clean.
- 7 cool.
