Ingredients

- 1 cup bulgar wheat, dry
- 2 cups boiling water
- 1 1/2 teaspoons salt
- 1/4 cup lemon juice
- 1 teaspoon garlic
- 1/2 teaspoon mint, fresh
- 1/4 cup olive oil
- salt and pepper, to taste
- 1/4 cup scallion, chopped (including greens)
- 2 tomatoes, diced
- 1 cup parsley, chopped
- 1/2 cup chickpeas, canned
- 1 cucumber, chopped
Recipe
- 1 cook bulgur wheat.
- 2 when it is done, add lemon juice, garlic, oil, mint, salt and pepper, and mix thoroughly. refrigerate 2-3 hours.
