Spice-rubbed Lamb Chops With Chickpea Simmer

Ingredients

  • Servings: 4
  • 2 tablespoons fresh parsley, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cloves garlic, minced
  • 4 center-cut lamb loin chops (about 1 3/4lbs)
  • 1 tablespoon vegetable oil
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pinch hot pepper flakes
  • 1 (19 ounce) can chickpeas, drained and rinsed
  • 1 (28 ounce) can diced tomatoes
  • 4 cups packed fresh spinach, trimmed

Recipe

  • 1 chickpea simmer.
  • 2 in a large skillet, heat oil over med.

  • 6 in a nonstick skillet heat oil over med-high heat; fry chops, about 10 minute serve with chickpes mixture.
