Spice-rubbed Lamb Chops With Chickpea Simmer

Ingredients

- 2 tablespoons fresh parsley, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cloves garlic, minced
- 4 center-cut lamb loin chops (about 1 3/4lbs)

- 1 (19 ounce) can chickpeas, drained and rinsed

Recipe
- 1 chickpea simmer.
- 2 in a large skillet, heat oil over med.

- 6 in a nonstick skillet heat oil over med-high heat; fry chops, about 10 minute serve with chickpes mixture.
