Mushrooms And Artichoke Hearts Vinaigrette

Ingredients

- 2 (6 ounce) jars marinated artichoke hearts
- 2 (7 1/2 ounce) cans sliced water chestnuts, drained
- 1 lb fresh mushrooms, thinly sliced
- 1 bunch scallion, chopped
- 2 tablespoons olive oil
- 1 1/2 tablespoons balsamic vinegar
- 1/2 teaspoon salt
- 1 dash black pepper
- 1 dash hot pepper sauce
Recipe
- 1 drain artichokes, reserving the marinade from jars.
- 2 place the artichokes in a medium bowl.
- 3 add water chestnuts, mushrooms, and scallions.
- 4 add olive oil, vinegar, salt, and hot sauce to reserved artichoke marinade.
- 5 whisk well to blend.
- 6 pour over vegetables and toss.
- 7 serve immediately or cover and marinate in refrigerator for up to 3 days.
