Bean Salad

Ingredients

  • Servings: 6
  • 1 (19 ounce) can kidney beans, drained and rinsed
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 1 tomato, chopped
  • 1/2 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons good quality wine vinegar
  • 1 tablespoon dijon mustard
  • 1 garlic clove, minced
  • salt and pepper

Recipe

  • 1 combine the beans, vegetables and parsley.
  • 2 whisk dressing ingredients together and mix into salad. add salt and pepper to taste.
  • 3 cover and refrigerate till ready to eat.
