Bean Salad

Ingredients
- Servings: 6
- 1 (19 ounce) can kidney beans, drained and rinsed
- 1 small onion, chopped
- 1 green pepper, chopped
- 1 tomato, chopped
- 1/2 cup chopped fresh parsley
- 1/4 cup extra virgin olive oil
- 2 tablespoons good quality wine vinegar
- 1 tablespoon dijon mustard
- 1 garlic clove, minced
- salt and pepper
Recipe
- 1 combine the beans, vegetables and parsley.
- 2 whisk dressing ingredients together and mix into salad. add salt and pepper to taste.
- 3 cover and refrigerate till ready to eat.
