Zucchini And Corn Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 cup plain flour
  • 1 cup cornmeal
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 300 g creamed corn
  • 2 small zucchini, grated

Recipe

  • 1 pre heat oven to 200 c.
  • 2 lightly grease 12 hole muffin tray or line with paper cases.
  • 3 sift dry ingredients into a bowl.
  • 4 mix wet ingredients including vegetables in another bowl.
  • 5 combine the two mixes, lightly stir together.
  • 6 spoon into prepared pan.
  • 7 bake 15 - 20 minutes until golden.
