Beans Italian Style

Ingredients

- 2 teaspoons olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon dried sage
- 1 (16 ounce) can whole peeled tomatoes with juice, chopped, juices reserved
- 1 (19 ounce) can cannellini beans, rinsed and drained
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon fresh lemon juice or 1 teaspoon red wine vinegar
- 1 tablespoon finely chopped fresh parsley
Recipe
- 1 in a medium saucepan, heat oil. add garlic and sage and cook until garlic softens, about 30 seconds.
- 2 add drained chopped tomatoes and reserved tomato juice. cover over medium heat for 5 minutes.
- 3 add beans to saucepan. season to taste with salt and pepper.
- 4 simmer, uncovered, over low heat, stirring occasionally, until beans are hot, about 5 minutes.
- 5 stir in lemon juice and parsley and serve.
