Potato And Onion Quiche

Total Time: 1 hr 35 mins Preparation Time: 15 mins Cook Time: 1 hr 20 mins

Ingredients

  • Servings: 6
  • 200 g barbecue potato chips, crushed lightly
  • 90 g butter
  • 600 g onions, chopped
  • butter (for frying)
  • 4 eggs
  • 250 ml heavy cream
  • 1 teaspoon chopped parsley
  • salt and pepper

Recipe

  • 1 crust: blend together the chips and butter.
  • 2 press into a pie dish and refridgerate until needed.
  • 3 filling: saute onions in butter til soft.
  • 4 beat together the eggs and cream.
  • 5 stir in onion and parsley.
  • 6 season to taste.
  • 7 pour into prepared crust and bake at 350f for 1 hour until set.
  • 8 switch oven off and leave quiche in oven for 20 minutes before serving.
