Ww 3 Points - Twice Baked Bacon-cheddar Potatoes

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 2 large baking potatoes, scrubbed
  • 1/4 cup low sodium chicken broth
  • 2 slices bacon, crisp and crumbled
  • 1/2 cup shredded reduced-fat sharp cheddar cheese

Recipe

  • 1 preheat broiler, cover broiler rack with foil.
  • 2 prick potatoes a few times with a fork, place in microwave.
  • 3 cook on high until soft, about 8 min, turning over after 4 minute.
  • 4 let cool 5 minute.
  • 5 halve the potatoes lengthwise and scoop potato flesh into med bowl.
  • 6 stir broth into potato flesh.
  • 7 divide between the potato shells, top with bacon and cheese.
  • 8 place on broiler rack and broil until cheese melts, about 5 minute.
  • 9 3 points for 1 potato shell.
