Tropical Summer Salad

Ingredients

- 1 lb fresh green beans, cleaned and snipped
- 1 ripe mango, sliced 1/4 inch thick
- 4 cups baby greens
- 2 tablespoons prepared raspberry vinaigrette dressing
Recipe
- 1 in a saucepan, bring 2 quarts of water to a boil; turn off heat. drop beans in water adn blanch for 3 minutes, or until they turn bright green. strain green beans and plunge them into ice-water bath; drain well and pat dry.
- 2 gently toss beans with sliced mango, baby salad greens and raspberry vinaigrette. season with salt and pepper if desired.
