Weight Watchers Squash And Tomato Saute

Ingredients
- 2 teaspoons olive oil
- 1 zucchini (halved and sliced)
- 1 yellow squash (halved and sliced)
- 1/2 teaspoon salt
- 1 garlic clove (minced)
- 1 tomato (chopped)
- 2 tablespoons fresh basil (chopped)
- 1/4 teaspoon ground pepper
- 2 tablespoons parmesan cheese (grated)
Recipe
- 1 heat oil in large skillet. add zucchini, squash, salt and saute 5 minutes or when crisp tender.
- 2 add garlic saute for 30 seconds, stirring constantly.
- 3 add tomato and cook 1 minute until headed through.
- 4 stir in basil and pepper.
- 5 sprinkle with parmesan.
- 6 serve immediately.
