Speedy Refried Beans

Ingredients

- 2 teaspoons olive oil
- 2 garlic cloves, minced
- kidney bean (drained and rinsed)
- 1/4 cup vegetable stock
- 1/4 cup cilantro, chopped
- 1/2 teaspoon cumin
- 1/8 teaspoon chili pepper
- 1/2 ripe tomato, chopped
Recipe
- 1 in a small pot heat oil over med-hi heat. add garlic and saute for 2 minutes. add remaining ingredients and simmer over med-lo heat for 15 minutes, stirring regularly.
