Welliver's Cream Of Onion Soup

Ingredients
- Servings: 6
- 1/4 cup butter or 1/4 cup margarine
- 1 cup onion, chopped
- 1/4 cup green onion, thinly sliced
- 1/4 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 cups milk
- 1/2 cup chicken broth
- 1 1/2 cups half-and-half or 1 1/2 cups light cream
- crouton (optional)
Recipe
- 1 in a 3-quart saucepan, melt butter or margarine; add onions.
- 2 cover and cook over medium-low heat for 15 minutes, stirring occasionally, until onions are very tender.
- 3 stir in the flour, salt and pepper. add milk and chicken broth. cook and stir till thickened and bubbly. cook and stir for 1 minutes more.
- 4 add cream. cook and stir till heated through.
- 5 top with croutons, if desired.
