- 1 1/4 cups all-purpose flour
- 3/4 cup whole grain wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon table salt
- 2 large bananas
- 1 cup pumpkin
- 1/2 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 teaspoons pumpkin pie spice
- 4 ounces splenda artificial sweetener
Recipe
- 1 preheat oven to 325*f (160*c).
- 2 in a bowl combine the flour, baking soda, baking powder and salt. set aside.
- 3 in a bowl whisk together the pumpkin puree, banana, oil, sugar, eggs and vanilla.
- 4 add the flour mixture and stir the batter until it is just combined.
- 5 transfer to a greased 9 x 5 x 3-inch loaf pan and bake in the middle of the oven for 1 hour, or until a wooden pick inserted in the center comes out clean.
- 6 let the bread cool in the pan for 10 minutes on rack before removing.
- 7 cool completely on rack.
