Bean, Parsley & Garlic Mash

Ingredients
- Servings: 4
- 2 tablespoons olive oil
- 1/2 small onion, finely chopped
- 2 garlic cloves, chopped
- 2 (15 ounce) cans cannellini beans, drained
- 1 1/2 fluid ounces vegetable stock
- 1/2 cup flat leaf parsley, roughly chopped
- 2 pinches salt
- 1 pinch pepper
Recipe
- 1 heat oil in saucepan and tip in chopped onion.
- 2 cook gently for 5 minutes.
- 3 add the chopped garlic cloves and cook for another 2 minutes until soft.
- 4 tip the beans into the pan and mash roughly.
- 5 add stock to loosen as you mash.
- 6 stir in the parsley and the salt and pepper.
