Bean, Parsley & Garlic Mash

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1/2 small onion, finely chopped
  • 2 garlic cloves, chopped
  • 2 (15 ounce) cans cannellini beans, drained
  • 1 1/2 fluid ounces vegetable stock
  • 1/2 cup flat leaf parsley, roughly chopped
  • 2 pinches salt
  • 1 pinch pepper

Recipe

  • 1 heat oil in saucepan and tip in chopped onion.
  • 2 cook gently for 5 minutes.
  • 3 add the chopped garlic cloves and cook for another 2 minutes until soft.
  • 4 tip the beans into the pan and mash roughly.
  • 5 add stock to loosen as you mash.
  • 6 stir in the parsley and the salt and pepper.
