Wethersfield Onion Shortcake

Ingredients

  • Servings: 4
  • 2 cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 6 tablespoons butter
  • 1/2-3/4 cup buttermilk
  • 8 -10 medium onions
  • 6 tablespoons butter
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 eggs, slightly beaten

Recipe

  • 1 preheat oven to 450°f.
  • 2 for crust: put flour, baking powder and salt in a bowl.
  • 3 work in butter, until mixture resembles coarse meal.
  • 4 add buttermilk, gradually, mixing until a somewhat sticky dough is formed,
  • 5 turn onto floured board.
  • 6 knead briefly until smooth.
  • 7 line a 9- inch springform pan.
  • 8 chill until ready to use.
  • 9 for filling: saute onions in butter until transparent.
  • 10 spread over dough.
  • 11 mix sour cream and seasonings with beaten eggs.
  • 12 blend thoroughly.
  • 13 pour mixture over onions.
  • 14 bake 10 minutes.
  • 15 reduce oven to 350°f and bake 45 minutes more.
  • 16 slice in wedges.
  • 17 serves 4 as a main dish or 6-8 as a vegetable dish.
