Vegetarian Sloppy Joes

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 3 cups cooked brown rice
  • 2 (16 ounce) cans mexican style pinto beans
  • 3/4 cup hickory flavored barbecue sauce
  • 4 -6 whole grain buns

Recipe

  • 1 heat oil in large skillet over medium-high heat.
  • 2 add onion and green pepper; cook 2 to 3 minutes.
  • 3 add rice, beans and barbecue sauce.
  • 4 simmer 10 to 15 minutes, until heated through.
  • 5 serve on buns.
