Vegetarian Shepherd's Pie

Ingredients

- 1 (340 g) package soy protein
- 1 medium onion, minced
- 2 carrots, minced
- 2 tablespoons vegetable oil
- 7 ounces frozen peas
- 2 (14 ounce) cans creamed corn
- 4 cups prepared instant mashed potatoes
- 2 teaspoons thyme
- salt and pepper
Recipe
- 1 prepare instant mashed potatoes according to package directions; set aside.
- 2 in a large frypan add the oil, minced onions and carrots. sauté over medium heat until onions are translucent and carrots are soft.
- 3 add ground soy, frozen peas, salt and pepper to taste, and thyme. combine until heated through.
- 4 in a medium casserole dish transfer in the soy mixture. top with creamed corn and spoon and spread mashed potatoes over the top.
- 5 place in a preheated 350°f oven for 45 minutes
- 6 serve and enjoy!
