Vegetarian Shepherd's Pie

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 (340 g) package soy protein
  • 1 medium onion, minced
  • 2 carrots, minced
  • 2 tablespoons vegetable oil
  • 7 ounces frozen peas
  • 2 (14 ounce) cans creamed corn
  • 4 cups prepared instant mashed potatoes
  • 2 teaspoons thyme
  • salt and pepper

Recipe

  • 1 prepare instant mashed potatoes according to package directions; set aside.
  • 2 in a large frypan add the oil, minced onions and carrots. sauté over medium heat until onions are translucent and carrots are soft.
  • 3 add ground soy, frozen peas, salt and pepper to taste, and thyme. combine until heated through.
  • 4 in a medium casserole dish transfer in the soy mixture. top with creamed corn and spoon and spread mashed potatoes over the top.
  • 5 place in a preheated 350°f oven for 45 minutes
  • 6 serve and enjoy!
