Vegetarian Pitas

Ingredients

  • Servings: 2
  • 2 whole wheat pita bread
  • 1/3 cup hummus
  • 2 leaves romaine lettuce, shredded
  • 1 cup fresh spinach leaves, shredded
  • 1 medium tomato, coarsely chopped
  • 1/2 cup cucumber, peeled and chopped
  • 1/4 cup scallion, minced
  • 1/2 cup alfalfa sprout

Recipe

  • 1 slit open the pitas. spread the insides of each pocket with hummus.
  • 2 stuff each pita with half of remaining ingredients.
  • 3 enjoy!
