Vegetarian Baked Vegetable Stuffing

Ingredients
- Servings: 2
- 2 carrots, peeled and chopped into small pieces
- 1 stalk celery, finely chopped
- 1 medium onion, finely chopped
- 1 zucchini, chopped into small cubes
- 1 cup mushroom, chopped into small pieces
- 5 slices bread, with crusts removed cut into cubes
- 3 tablespoons lemon juice
- salt and pepper
- 1/4 cup vegetable stock
- 1/4 cup wine (or another 1/4 cup vegetable stock)
- 1/2 teaspoon sage
- 1/2 teaspoon thyme
- 2 tablespoons fresh parsley, chopped (or 1 tbsp. dried)
Recipe
- 1 combine all of the vegetables in a casserole dish.
- 2 then in a small bowl combine topping.
- 3 whisk the above together and then pour over the vegetable mixture.
- 4 cover and bake about 35 minutes at 350 degrees.
- 5 a baked sweet potato goes great with this.
