Bean Salad

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • Servings: 6
  • 2 (15 ounce) cans beans
  • 2 bell peppers, roasted and chopped
  • 3 cups chopped celery (leaves and all)
  • 1 head roasted garlic, smashed
  • 1 lemon, juice and zest
  • 6 slices crispy bacon, chopped (optional)
  • 2 tablespoons olive oil
  • salt & pepper

Recipe

  • 1 drain beans.
  • 2 mix together garlic, oil and lemon juice and zest.
  • 3 mix all ingrediants together, salt and pepper to taste.
  • 4 serve room temperature, enjoy!
