Ingredients

- 1 1/4 cups whole wheat pastry flour
- 3/4 cup wheat germ
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup sugar
- 1 cup vanilla soy yogurt
- 1/3 cup vegetable oil
- 1 tablespoon lemon juice
- 1 cup mashed ripe banana
Recipe
- 1 in large bowl, combine dry ingredients.
- 2 in medium bowl, combine wet ingredients.
- 3 add the yogurt mixture to the flour mixture and stir until just blended.
- 4 divide batter into muffin cups. bake at 400 for 20-25 minutes.
