Wheat Germ Banana Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 10
  • 1 1/4 cups whole wheat pastry flour
  • 3/4 cup wheat germ
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1 cup vanilla soy yogurt
  • 1/3 cup vegetable oil
  • 1 tablespoon lemon juice
  • 1 cup mashed ripe banana

Recipe

  • 1 in large bowl, combine dry ingredients.
  • 2 in medium bowl, combine wet ingredients.
  • 3 add the yogurt mixture to the flour mixture and stir until just blended.
  • 4 divide batter into muffin cups. bake at 400 for 20-25 minutes.
