Vegetarian Quinoa Casserole

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 cup quinoa
  • 2 cups water
  • 1 piece kombu
  • 1 tablespoon oil (i like grapeseed)
  • 1/2 onion
  • 1 bunch asparagus
  • 1 carrot
  • 1 tablespoon soy sauce

Recipe

  • 1 rinse quinoa and set aside.
  • 2 pour water into rice cooker.
  • 3 add quinoa.
  • 4 chop onion, slice carrot, cut asparagrass stalks into 1 inch pieces.
  • 5 add all vegetables.
  • 6 break kombu into 1/2 inchi pieces add to water.
