Vegetarian Baked Pumpkins

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 4 medium golden nugget pumpkin
  • 4 cups mixed vegetables, grated (carrot, zucchini, potato etc)
  • 2 mushrooms, finely chopped
  • 4 spring onions, chopped
  • 1 cup tasty cheese, grated
  • 420 g soybeans, rinsed & drained
  • 2 tablespoons honey
  • 2 tablespoons cumin seeds, ground
  • 1 teaspoon coriander

Recipe

  • 1 pre-heat oven to 180.c.
  • 2 cut 1/3 off the top of each pumpkin and scoop out seeds, level off the base slightly so they sit flat.
  • 3 wrap pumpkins in foil and bake for approx 20 minutes.
  • 4 combine remaining ingredients and mix well.
  • 5 fill pumpkins with bean mixture & cover again with foil.
  • 6 return them to the oven and bake for approx 40 mins or until pumpkins are tender.
