Vegetarian Baked Pumpkins

Ingredients
- Servings: 4
- 4 medium golden nugget pumpkin
- 4 cups mixed vegetables, grated (carrot, zucchini, potato etc)
- 2 mushrooms, finely chopped
- 4 spring onions, chopped
- 1 cup tasty cheese, grated
- 420 g soybeans, rinsed & drained
- 2 tablespoons honey
- 2 tablespoons cumin seeds, ground
- 1 teaspoon coriander
Recipe
- 1 pre-heat oven to 180.c.
- 2 cut 1/3 off the top of each pumpkin and scoop out seeds, level off the base slightly so they sit flat.
- 3 wrap pumpkins in foil and bake for approx 20 minutes.
- 4 combine remaining ingredients and mix well.
- 5 fill pumpkins with bean mixture & cover again with foil.
- 6 return them to the oven and bake for approx 40 mins or until pumpkins are tender.
