Sweet And Sour Red Cabbage

Ingredients

- 1 large red cabbage
- 4 tablespoons bacon fat
- 1 medium onion, chopped coarsely
- 1/2 teaspoon salt
- 2 tart apples, cored and sliced (granny smith is my favorite)
- 1/4 cup boiling water
- 1/2 cup vinegar
- 1/3 cup brown sugar
Recipe
- 1 remove the outer leaves and hard core from cabbage and chop coarsely.
- 2 heat the bacon fat in a large skillet or kettle. add onions and slowly cook until tender.
- 3 add the cabbage and salt. cover and steam for 10 minutes.
- 4 add apples and 1/4 cup boiling water.
- 5 cover and simmer over low heat for 1 hour or until the cabbage is tender.
- 6 add the vinegar and sugar and continue to cook 15 minutes longer.
- 7 serve hot.
- 8 note: sugar and vinegar amounts can be varied according to your family's tastes.
