Yam And Apple Salad (creole)

Ingredients

- 4 cups yams, peeled, grated
- 2 granny smith apples, peeled, cored, chopped
- 1 fuji apple, peeled, cored, chopped
- 1 cup dried cranberries
- 3/4 cup pecans, chopped, toasted
- 1 large orange, juice of
- 1 large lime, juice of
- 2 tablespoons wine vinegar
- 1 tablespoon honey dijon mustard
- 2 garlic cloves, minced
- 1 dash salt, to taste
- 1 dash pepper, to taste
- 1/3 cup olive oil
Recipe
- 1 in a large bowl, mix yams, apples, cranberries & pecans.
- 2 in a small bowl, whisk together orange juice, lime juice, vinegar, mistard, garlic, salt & pepper, until well blended, then add oil in a thin stream, whisking constantly.
- 3 pour over the salad & toss well to combine before covering & refrigerate overnight to allow flavors to meld & yams to soften.
