Yellowsplit Pea Puree

Ingredients

  • Servings: 6
  • 2 cups split peas, yellow
  • 6 cups vegetable stock
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 turnip, chopped
  • 1 parsnip, chopped
  • 1/4 teaspoon marjoram, dried
  • 1/4 teaspoon thyme, dried
  • 1 teaspoon salt
  • 1 onion, minced
  • 2 tablespoons butter, melted
  • 2 tablespoons flour

Recipe

  • 1 cook split peas, vegetable stock, onion, carrot, turnip, parsnip, marjoram, thyme, and salt together.
  • 2 cook for two hours; drain.
  • 3 mash in blender.
  • 4 fry minced onion in butter until lightly browned; add flour.
  • 5 add to mashed vegetables.
  • 6 beat until smooth.
