Ingredients

- 1 cup yellow squash, cooked and mashed
- 1 egg, beaten
- 1/3 cup all-purpose flour
- 1/3 cup cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 medium onion, grated
- vegetable oil
Recipe
- 1 combine the cooked squash and egg, stirring well.
- 2 combine flour, cornmeal, baking powder and salt, stir well.
- 3 add squash mixture and onion; stir until blended.
- 4 drop squash mixture by level tablespoonful into hot oil.
- 5 cook until golden brown, turning once. drain well on paper towels.
