Yellow Squash Puffs

Ingredients

  • Servings: 4
  • 1 cup yellow squash, cooked and mashed
  • 1 egg, beaten
  • 1/3 cup all-purpose flour
  • 1/3 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 medium onion, grated
  • vegetable oil

Recipe

  • 1 combine the cooked squash and egg, stirring well.
  • 2 combine flour, cornmeal, baking powder and salt, stir well.
  • 3 add squash mixture and onion; stir until blended.
  • 4 drop squash mixture by level tablespoonful into hot oil.
  • 5 cook until golden brown, turning once. drain well on paper towels.
