Yellow Rice With Vegetables And Shrimp

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olives or 1 tablespoon vegetable oil
  • 1 cup uncooked long-grain rice
  • 2 cups fat-free chicken broth
  • 1 tablespoon tabasco sauce
  • 1/4 teaspoon ground turmeric
  • 1 cup frozen green pea
  • 1/2 cup sliced green onion
  • 1 medium tomato, chopped
  • 1/2 cup sliced black olives
  • 1 cup peeled small shrimp

Recipe

  • 1 heat oil in a medium saucepan; add rice and cook for 1 to 2 minutes or until lightly golden, stirring frequently.
  • 2 stir in chicken broth, tabasco® pepper sauce, and turmeric; bring to a boil. reduce heat to low. simmer about 15 minutes or until most of the broth is absorbed.
  • 3 stir in peas, green onions, tomato, olives and shrimp; cover and simmer for another 5 minutes or until rice is done.
