Ingredients

- 7 -8 ounces puff pastry (store-bought)
- 1/2 cup cottage cheese
- 1/2 cup 15% cream 1 tbsp. flour
- 1/4 teaspoon salt
- black pepper
- 2 tablespoons vegetable oil
- 4 ounces bacon
- vegetable oil
- 1/2 medium onion, quartered and sliced very thin
Recipe
- 1 pastry: lightly flour your counter, and roll the chilled dough into a 20-inch square, less than 1/8-inch thick. cut into 4 disks 8-inches across. carefully transfer the disks to the oiled pastry sheet. cover with plastic wrap and refrigerate for 1/2 hour or longer.
- 2 preheat the oven to 425°f drop the cottage cheese into the food processor and process about 1/2 minute, until smooth. add the other ingredients of the filling. process again to blend.
- 3 cut the bacon into slices. oil a frying pan lightly, set over moderate heat, and cook the bacon 1 minute, then stir in the onions. toss several minutes until the onions have softened but are not yet tender.
- 4 leaving a 1/4 inch border free, spread the cheese mixture over the chilled.
- 5 pastry disks. scatter the bacon and onions on top. bake in upper middle level of the oven for 12-15 minutes, until the pastry is golden brown, and the topping is browned lightly.
