Yellow Squash Casserole

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 2 lbs yellow squash
  • 1 medium onion
  • 2 eggs, beaten
  • 1 cup milk
  • 2 cups sharp cheddar cheese
  • 1 1/2 cups crackers, crumbled
  • 1/2 cup butter, melted
  • 1 1/2 teaspoons salt
  • 1 teaspoon sugar
  • 1/2 teaspoon pepper

Recipe

  • 1 wash and slice squash and onion.
  • 2 cook in water, just to cover. 10-15 minutes, or until tender.
  • 3 drain and mash squash.
  • 4 add all other ingredients, mix well.
  • 5 bake in a buttered casserole. 300 degrees for 1 hour.
