Yellow Squash And Bean Chili

Ingredients

  • Servings: 6
  • 1 lb ground lean lamb
  • 1 quart chicken broth
  • 1/2 cup dry wine
  • 2/3 cup dried great northern beans
  • 2/3 cup dried garbanzo beans
  • 1 cup chopped onion
  • 1 cup yellow bell pepper
  • 1 cup thinly sliced leek
  • 1 cup cubed summer squash
  • 1 cup red potatoes
  • 2 teaspoons minced garlic
  • 2 teaspoons jalapeno chili
  • 2 teaspoons cumin seeds
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • 1 bay leaf
  • salt and pepper
  • 1 small tomato, finely diced
  • 2 green onions, finely sliced
  • 3 tablespoons finely chopped fresh cilantro

Recipe

  • 1 cook lamb in lightly greased skillet until browned, about 8 minutes, crumbling with a fork.
  • 2 combine lamb and remaining ingredients (chicken broth through bay leaf) in a slow cooker.
  • 3 cover and cook on low for 7-8 hours or until the beans are tender.
  • 4 season to taste with salt and pepper. discard bay leaf.
  • 5 sprinkle each bowl with tomato, green onions and cilantro.
