Yellow Rice With Peas

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 3 tablespoons vegetable oil
  • 1 tablespoon achiote seeds
  • 1/2 medium onion, minced
  • 1 garlic clove, minced
  • 2 cups long grain rice
  • 3 1/2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup peas

Recipe

  • 1 in a medium saucepan, heat oil over medium heat. add achiote seeds and cook until seeds are sizzling and oil is a rich gold color.
  • 2 remove from heat. with a spoon, scoop up and discard seeds, leaving oil in pan.
  • 3 return pan to medium heat. add onion and garlic and cook until softened, 2 minutes.
  • 4 add rice and cook, stirring, 1 minute or until grains look opaque.
  • 5 stir in chicken broth, salt and pepper. bring to a boil, turn heat to low, cover pan and cook 18 mintues or until liquid is absorbed.
  • 6 cover and let rice stand 5 minutes. gently stir in peas.
