Yellow Rice With Peas

Ingredients

- 3 tablespoons vegetable oil
- 1 tablespoon achiote seeds
- 1/2 medium onion, minced
- 1 garlic clove, minced
- 2 cups long grain rice
- 3 1/2 cups chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup peas
Recipe
- 1 in a medium saucepan, heat oil over medium heat. add achiote seeds and cook until seeds are sizzling and oil is a rich gold color.
- 2 remove from heat. with a spoon, scoop up and discard seeds, leaving oil in pan.
- 3 return pan to medium heat. add onion and garlic and cook until softened, 2 minutes.
- 4 add rice and cook, stirring, 1 minute or until grains look opaque.
- 5 stir in chicken broth, salt and pepper. bring to a boil, turn heat to low, cover pan and cook 18 mintues or until liquid is absorbed.
- 6 cover and let rice stand 5 minutes. gently stir in peas.
