Three Bean Chili

Ingredients

  • Servings: 6
  • 2 teaspoons olive oil
  • 1 cup prechopped onion
  • 1/2 cup prechopped green bell pepper
  • 2 teaspoons bottled minced garlic
  • 3/4 cup water
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1/4 teaspoon black pepper
  • 1 (15 1/2 ounce) can garbanzo beans, rinsed and drained
  • 1 (15 1/2 ounce) can red kidney beans, rinsed and drained
  • 1 (15 1/2 ounce) can black beans, rinsed and drained
  • 1 (14 1/2 ounce) can organic vegetable broth
  • 1 (14 1/2 ounce) can no-salt-added diced tomatoes, undrained
  • 1 tablespoon yellow cornmeal
  • 1/4 cup chopped fresh cilantro
  • 6 tablespoons reduced-fat sour cream

Recipe

  • 1 heat olive oil in a large saucepan over medium-high heat. add onion, bell pepper, and garlic to pan; sauté 3 minutes.
  • 2 stir in 3/4 cup water and next 9 ingredients (through diced tomatoes); bring to a boil. reduce heat, and simmer 8 minutes. stir in cornmeal; cook 2 minutes. remove from heat; stir in cilantro. serve with sour cream.
