Rhubarb-pecan Muffins

Ingredients

  • Servings: 12
  • 2 cups flour
  • 3/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup pecans, chopped
  • 1 large egg
  • 1/4 cup vegetable oil
  • 2 teaspoons orange rind, grated
  • 3/4 cup orange juice
  • 1 1/4 cups rhubarb, fresh fine chopped

Recipe

  • 1 combine all dry ingredients.
  • 2 beat egg and oil; add orange juice.
  • 3 add to flour mix.
  • 4 add rhubarb.
  • 5 bake 350f 25-30 min.
